| 内容記述 | 単身世帯の食料消費は、二人以上世帯とは異なり、食生活の外部化比率が年齢階級によらず全体的に高いという特徴がある。本稿は、単身世帯における食料消費と世帯属性の関係を、食生活の外部化を念頭に置き、検討することを課題とした。そのため、内食材料、調理食品、外食のエンゲル関数を総務省『全国消費実態調査』「匿名データ」を用いて計測した。計測結果から以下の点が明らかとなった。年齢が高くなるほど、内食材料の需要が多く、外食の需要が少なくなる傾向がすべての計測年においてみられたが、調理食品については計測年によって効果が異なっていた。また、すべての計測年において、男性と単身赴任・出稼ぎが、内食材料需要の減少要因、外食需要の増加要因としてそれぞれ作用しており、パート勤務が内食材料需要の増加要因、外食需要の減少要因として作用していた。 | |||||

| 内容記述 | Expenditure shares of eating-out and processed food in one-person households are higher than those in two-or-more-person households. The purpose of this paper is to examine the factors affecting the food consumption of one-person households by estimating Engel functions of foodstuffs for meals at home, processed food, and eating out with the anonymized data of the National Survey of Family Income and Expenditure in 1989, 1994, 1999, and 2004. The estimated results revealed the following. A higher aged household tended to demand more foodstuffs and less eating-out in all estimated years. The demand for processed food varied by the estimated years, depending on the age of the householder. Male, and living away from home for business or working seasonally away home, respectively, affected demand for foodstuffs negatively and for eating-out positively in all estimated years. Part-time working affected demand for foodstuffs positively and for eating-out negatively in all estimated years. | |||||
